1 head Celery

2 large Onions

1 ½ head Garlic

1 large Red Pepper

1 large Green Pepper

1 med. Yellow Pepper

1 med. Orange Pepper

Chop all vegetables into chunks and blend in food processor until finely chopped. Store your sofrito refrigerated, in an airtight container for up to two to three weeks.
