Strawberry Shortcake is probably one of my husbands favorite desserts, I’ll admit I don’t make it as often as he’d probably like but I’m not perfect. Here’s my super easy go to recipe that I hope you try out and love.
Here’s what you’ll need:
1 1/2 pound Strawberries (stemmed and quartered)
8 tbsp. Sugar
2 cups all purpose flour
2 tsp. Baking powder
1/4 tsp. Baking soda
1/4 tsp. Kosher salt
1 1/2 cups heavy cream
Slice strawberries and mix with 3tbsp. sugar and refrigerate while juices develop.
Sift flour, baking powder, baking soda, 3 tbsp. sugar and salt in a medium bowl. Add heavy cream and mix until combined. Place mixture in un-greased 8 inch pan, or form sizable dollops on a parchment paper lined baking sheet, sprinkle remaining sugar on top and bake until golden, 18-20 minutes.
Remove from pan and place on cooling rack. Cut in half and spoon strawberries on bottom with their juices on each bottom, top with whip cream and shortcake top.
