2 cups heavy cream (cold)
4 tbsp sugar
2 tsp vanilla
1 tsp lemon zest (optional)
Using a mixer fitted with a whisk attachment, whisk heavy cream and vanilla together. As it begins to thicken, sprinkle in sugar and lemon zest, beat until stiff peaks begin to form.
**I find that sprinkling in the sugar as the cream begins to thicken prevents the sugar from settling to the bottom and more effectively sweetening the cream.
