I LOVE caramel. It probably has to do with the sweet tooth I inherited from my mother, but I love it. I know it may easier and convenient to buy the jar caramel and if you're into that, it's cool BUT if you put a little time and love into it, this super easy homemade caramel will be a staple you can keep in your back pocket and impress guest when dessert time rolls around.
Here's what you'll need:
2 cups sugar
1/3 cup water
1 1/4 cup heavy cream
1/2 tsp vanilla
1/2 tbsp butter
Simmer water and sugar in saucepan until sugar dissolves. Increase heat and boil until sugar turns brown. With a wooden spoon stir and slowly add cream, and vanilla. Don't panic if you see it starting to bubble, that is totally normal, just keep stirring. Simmer until caramel comes together, turn the heat off and add butter. Stir until smooth and shiny.
P.S.
If you're feeling frisky and want to switch it up, after adding the butter, sprinkle some sea salt at the very end for an amazing salted caramel.
