Gooseberry Granola

5 cups rolled oats

1/2 cup vegetable or coconut oil

1/2 cup honey

1 cup soaked gooseberries

1 tsp vanilla

1/3 cup brown sugar

1/2 cup sliced almonds (optional)

pinch of salt

Add sugar,honey, oil, salt and vanilla into bowl and whisk until sugar dissolves and oil is incorporated.

Add oats to a large mixing bowl and pour sugar mixture over. Fold to make sure sugar covers all the oats. Fold in gooseberries and pour oat mixture onto baking sheet making sure to spread into an even layer; firmly pack oat mixture onto the baking sheet.

Bake for 30 minutes, rotating the pan halfway through.

Allow granola to cool at room temperature about 45 minutes before scooping off baking sheet.

Store in an airtight container at room temp.
