Orange Coconut Baked French Toast

Loaf of Bread (I like to use Challah or Brioche) Preheat Oven 350*

1 cup shredded coconut

1/2 cup orange juice

1 tsp orange zest

1/2 tsp lemon zest

1 cup coconut milk

1/4 cup cream of coconut

6 large eggs

1 tsp vanilla

1/3 cup sugar

Butter baking dish and place bread into dish. In a separate bowl, combine all ingredients and whisk until sugar dissolves. Pour mixture over bread and allow to sit overnight or until bread soaks up custard mixture. Bake in preheated oven for 45 minutes to an hour.
