Ginger Fried Chicken

4 Chicken breast

2 tsp black pepper

1 tbsp garlic paste

2 tbsp finely grated ginger

1 tbsp Goya adobo seasoning

1 packet Sazon

1 large egg

2 cups flour

1 cup cornstarch

paprika

kosher salt

vegetable oil

Cut chicken breast into cubes and season with black pepper, garlic paste, ginger, adobo and sazon. Marinate for 5 hours or overnight.

Whisk egg and add to seasoned chicken, tossing to coat the chicken. In a separate dish, combine flour, cornstarch and paprika.

In a large pot filled halfway with oil, heat oil to 350-375 degrees. As you add the chicken, the temperature will drop. Keep oil between 300 to 325 degrees while the chicken fries.

Fry chicken until golden brown, season with salt while chicken is hot out the fryer and allow to cool on a wire rack; this keeps the chicken from getting soggy as opposed to cooling on a paper towel. Enjoy!
