Pumpkin Fritters

Every Thanksgiving, my family would have some kind of fritters included in our holiday menu. I absolutely love fritters and I hope you're going to love this recipe and include it in your holiday menu or maybe whenever the fritter craving hits you.
3 cups flour
1/2 cup packed brown sugar
3 tbsp sugar
15 oz pumpkin puree
2 tsp vanilla essence
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp all spice
1/2 tsp ground ginger
1/4 tsp salt
1/2 tbsp baking powder
1 1/4 cup milk
2 large eggs
1 tbsp maple syrup
In a medium bowl, combine pumpkin, sugar, eggs, maple syrup, vanilla essence and milk. In a separate large bowl, combine dry ingredients. Create a well in the center of dry ingredients and add wet ingredients. Stir until combined, do not over mix.
Allow batter to rest while frying oil becomes hot. Fry fritter and flip after a minute, fry the other side for a minute and return to it's original side to continue frying then flip again to continue the frying process. Remove fritter from frying pan when both sides are golden brown.
